Instructions
- Pre-heat the oven to 180ºC and line a baking tray with greaseproof paper.
 - In a mixing bowl add the egg, low fat spread, cinnamon, sweetener and beat together with a wooden spoon.
 - Add the oats, flour, bicarbonate of soda, salt and vanilla and stir well until combined. Add in the diced apple and stir.
 - Using two metal spoons, drop the cookie mixture into 15 equal round scoops onto the baking tray.
 - Shape them using a metal spoon or fork by pressing on the tops to flatten and shaping the edges into rounds.
 - Bake in the oven for 10 minutes until golden brown in colour and allow to cool on the tray until cool enough to handle then transfer to a wire rack to cool completely.
